    japanese chickens don’t have salmonella (they test and cull) so they even have chicken sashimi and can get away with recipes like this with no worry. I see a lot of raw egg yolk dishes on XHS as well.

    Salmonella is still pretty rare here in the US on eggs although it does happen; I have been eating raw egg for decades with no ill effects but of course everyone should watch out for their own safety! I am pretty healthy otherwise so i gamble.
